3 Delicious Wild Stinging Nettle Recipes

Spring has sprung and it’s the perfect moment to go out and forage stinging nettles. But what do you do with these once you have them home? Here are three great stinging nettle recipes that you can make easily in less than 30 minutes.

Stinging Nettle Crisps: Flavour Option 1

Ingredients:

  • 1 bowl of stinging nettles, washed well
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp white sesame seeds
  • Optional: chili flakes, cumin seeds, or other herbs

Ingredients:

  • 1 bowl of stinging nettles, washed well
  • 2 tbsp peanut oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tbsp black sesame seeds
  • Optional: chili flakes, cumin seeds, or other herbs

Instructions

  1. Cut the top leaves of stinging nettles
  2. Wash the nettles well
  3. Mix the other ingredients
  4. Coat the nettles in the oil mix
  5. Spread out on a baking tray.
  6. Bake in a low oven. 130 degrees for 25 minutes
Stinging Nettle Soup Recipe

Stinging Nettle Soup Recipe

For 2 persons
2 large handfuls of washed stinging nettle leaves
1 potato (approx. 140g)
1 onion
4 to 6 dl water
2 tablespoons olive oil
salt
pepper

Instructions:

1) Peel and chop onion
2) Peel potato and cut into 2cm/2cm pieces
3) In a saucepan, sauté onion in oil 1-2 min over medium heat
4) Add potato, stinging nettles, 4 dl water
5) Cover with a lid and cook until the leaves are soft (approx. 10min)
6) Place in a blender and add 2 dl water (or more, depending on desired consistency).
7) Season with salt and pepper
8) Optionally, add 1 tablespoon of soy sauce, or 1 clove of garlic, or 1 tablespoon of curry powder. This is your moment to shine and be creative!

Stinging Nettle Quiche Recipe

Stinging nettle quiche recipe

Ingredients:

  • 4 Eggs
  • 250 ml cream
  • 500gr stinging nettle 
  • 1 block of feta
  • Shallots, onion, or leeks
  • 1 pre-made round pie dough (if you want to make your own, use this recipe below)

Instructions:

  1. Place dough in a pie dish. Pre-bake for 10 minutes with dry beans on top to prevent the dough from puffing up.
  2. In a skillet, melt a knob of butter, sauté the finely chopped shallot and roughly chopped nettles for a few minutes until the nettles reduce.
  3. Prepare the filling by mixing 4 eggs, half a packet of crumbled Feta, and the cream. Add the nettles. Mix well, season with pepper and salt.
  4. Pour the filling into the pre-baked crust after removing the dry beans. Crumble some more Feta on top.
  5. Bake for 35-40 minutes at 200 C

Here is the recipe and instructions if you want to make your own dough for the quiche, otherwise a store-bought dough will work: 

  • 200 gr white flour
  • 1 TBSP cold water
  • 90 gr butter
  • 50 gr parmesan
  • 1 TBSP of dried thyme 
  • 1 pinch of salt

Mix the flour, Parmesan, salt, and thyme. Add cold butter cut into small pieces and mix well. Add the egg. The dough should be homogeneous, neither too sticky (add flour) nor too dry (add a little cold water). Form into a ball and chill in the fridge for at least 30 minutes. Roll out and place in the pie dish as instructed above.
